Baked Rice Pudding
1 cup cooked rice
2 1/2 cups milk
3 large eggs, lightly beaten
3/4 cup sugar
3/4 cup raisins
1 teaspoon Watkins Original Double-Strength Vanilla Extract
1/4 teaspoon salt
1/2 teaspoon Watkins Ground Cinnamon
1/4 teaspoon Watkins Ground Nutmeg

Preheat oven to 325 degrees F. Lightly grease a 9-inch glass baking dish.

In a large bowl, stir together first 7 ingredients. Spoon into prepared baking dish. Place baking dish in a large pan; pour water into the pan to a depth of 1-inch. Bake for 1 1/2 hours, or until lightly browned and set. Combine cinnamon and nutmeg; sift over top of pudding. Cool slightly and cut into squares to serve.

Simply Sweet Cinnamon Strawberry Shortcake
2 cups/450 mL all-purpose flour
1/4 cup/60 mL sugar
1 tbsp/15 mL Watkins Baking Powder
1/2 tsp/2.5 mL baking soda
1/2 tsp/2.5 mL Watkins Purest Ground Cinnamon
1/2 tsp/2.5 mL Watkins Orange Peel
1/2 tsp/2.5 mL salt
1/4 cup/60 mL butter
1/4 tsp/1.2 mL Watkins Original Double-Strength Vanilla
1 1/4–1 1/2 cups/310–375 mL heavy cream
1/4 cup/60 mL walnuts, chopped

Preheat oven to 400F/200C. Mix together flour, sugar, baking powder, baking soda, cinnamon, orange peel, salt and butter. Stir in vanilla, cream and walnuts. Drop on baking sheet using a 1/4 cup/60 mL measuring cup. Brush with butter and sprinkle with sugar and cinnamon, if desired. Bake for 15 to 20 minutes or until brown. Cool shortcakes and cover with strawberries and whipped cream.

Sweetened Strawberries
4–6 cups/1 to 1.5 quarts strawberries
1/4 cup/60 mL sugar

Hull and quarter strawberries, toss in a medium bowl with sugar, let stand at least 20 minutes. Makes 12 biscuits.

Welcome to another issue of Around the Kitchen Table!

One of the recipes featured in this issue is Brushfire Burgers with Smoky Jalapeno Topping made with ground beef, Watkins Meat Magic, and Watkins herbs and spices.

Brushfire Burgers with Smoky Jalapeno Topping

2 lbs/900 g lean ground beef
4 green onions, chopped (1/4 cup/60 ml)
4 tsp/20 ml Watkins Meat Magic
1 tsp/5ml Watkins Cilantro
1/2 tsp/2.5 ml Watkins Sage
1/2 tsp/2.5 ml Watkins Onion and Garlic Pepper
1/2 tsp/2.5 ml Watkins Seasoning Salt
8 hamburger buns
1 avocado, sliced
Lettuce

Topping
3/4 cup/180 ml mayonnaise
1/4 cup/60 ml prepared mustard
2 tsp/10 ml Watkins Chipotle Liquid Spice

Combine topping ingredients, refrigerate at least 30 minutes to allow flavors to develop.

Preheat grill to medium heat. Combine all burger ingredients in a large bowl and form into 8 patties about 3/4 inch/20 mm thick. Grill about 15 minutes, turning once, or until desired doneness is reached. Serve on buns with topping and slices of avocado and lettuce. Or use Watkins Steak Sauce with burgers instead of mayonnaise mixture.

Welcome to another issue of Around the Kitchen Table!

One of the recipes featured in this issue is Chicken With Asparagus and Mushrooms made with fresh spring asparagus, chicken breasts, mushrooms, healthy Watkins Grapeseed Oil, and Watkins low-sodium Chicken Broth.

Watkins Grapeseed Oil is one of the only foods shown to not only lower LDL (“bad”) cholesterol, but also increase HDL (“good”) cholesterol – a distinct advantage over other oils. Original Grapeseed Oil has a light, neutral flavor that complements any cuisine and won’t clash with foods. It has the highest flashpoint of all cooking oils with less smoke and less danger of burning.

Chicken With Asparagus and Mushrooms

2 tablespoons Watkins Grapeseed Oil
4 boneless, skinless chicken breast halves
1/4 teaspoon Watkins Pepper
1/4 cup chopped shallots or green onions
1 cup chicken broth prepared from 1 cup boiling water and 1 1/2 teaspoons Watkins Chicken Soup Base
12 ounces fresh asparagus spears or one 10-ounce package frozen asparagus spears
2 cups fresh mushrooms (about 4 ounces)
3 tablespoons balsamic vinegar
2 tablespoons margarine or butter, softened
2 tablespoons toasted pine nuts
Hot cooked rice

In a large, heavy skillet heat oil over medium-high heat. Add chicken and cook for 2 minutes. Turn chicken over in skillet and sprinkle with pepper. Add shallots or green onions to skillet; cook for 2 minutes more. Drain off fat. Add chicken broth. Bring to boiling; reduce heat. Cover and simmer for 5 minutes.

Meanwhile, snap off and discard woody bases from fresh asparagus. Cut asparagus into 2-inch lengths. Halve any large mushrooms. Add asparagus to skillet; cover and cook for 5-7 minutes, or till asparagus is just tender and chicken is tender and no pink remains. Add mushrooms. Cover and cook for 1 minute.

Use a slotted spoon to transfer chicken, asparagus, and mushrooms to a serving platter. Add vinegar to liquid in skillet. Bring to boiling; boil over high heat for 5 minutes, or till liquid is reduced to 1/3 cup. Remove skillet from heat. Using a wire whisk, blend margarine or butter into liquid in skillet. Spoon over chicken; sprinkle with pine nuts. Serve with rice.
