Spinach Salad With Fruit
Tossed with ripe banana slices, fresh strawberries, and avocado, this fabulous spinach salad looks and tastes special enough for company. Fresh strawberries, spinach, and avocados are plentiful this time of year.

1/2 cup sugar
1/3 cup white wine vinegar
1/3 cup extra virgin olive oil
1 teaspoon Watkins Onion Flakes
1 teaspoon Watkins Ground Mustard
1 package (12 ounces) frozen unsweetened strawberries, thawed and undrained
1 teaspoon poppy seeds
1 package (9 ounces) fresh spinach, washed and drained
1 cup sliced fresh strawberries
1 large banana, sliced
1 medium ripe avocado, peeled and sliced
2 green onions, thinly sliced

In a large bowl, whisk the first five ingredients until the sugar is dissolved. Stir in thawed strawberries and poppy seeds.

Tear large spinach leaves into bite-sized pieces. Remove any large stems. These steps are not necesary if you are using baby spinach leaves. Place spinach on individual salad plates. Arrange the fresh strawberries, banana and avocado over spinach. Top with green onions and dressing. Yield 8 servings.

I don’t know about you, but 2009 seems to have flown by. While winter doesn’t officially arrive until later this month, harsher winter weather has arrived in most parts of North America. We had strong gusting winds for a couple of days and our electricity was off for a few hours Saturday evening. The moon light shining through the windows provided enough light for me to find candles and matches so we weren’t sitting in the dark. As it turned out we had a very peaceful evening.

Wintermint Wafers

Wintermint Wafers are minty, chewy, chocolaty and buttery wafers drenched in dark chocolate.

Chocolate Cookies
1 cup (2 sticks) butter, softened
1 cup confectioners’ sugar
1 teaspoon Watkins Pure Peppermint Extract
1/2 teaspoon salt
1 cup unsweetened Watkins Baking Cocoa
1 1/2 cups flour

Chocolate Coating
1 pound semi-sweet chocolate, chopped
1 teaspoon Watkins Pure Peppermint Extract
colored sprinkles for garnish

Chocolate Cookies
In large bowl, beat butter and confectioners’ sugar with electric mixer until light and fluffy. Stir in peppermint extract followed by salt and cocoa powder; mix. Add flour and mix to incorporate.

Divide dough in two pieces and place each on large sheet of plastic wrap. Flatten into 1/2-inch thick discs, wrap and refrigerate until firm enough to roll out, about 45 minutes.

Preheat oven to 350 degrees F. Remove chilled dough, place disc between two sheets of parchment; roll out to 1/8-inch thick. Cut desired shapes and place on parchment-lined baking sheets. Bake 5 to 6 minutes. Remove cookies from oven; cool on pan 3 to 4 minutes. Remove to wire rack to cool completely.

Chocolate Coating
Place chocolate in large microwave-safe dish. Microwave 30 seconds on high, stir and continue to microwave in 10- to 20-second intervals, stirring after each until chocolate is melted and smooth. Stir in peppermint extract.

To frost cookies, place one cookie on slotted spatula, carefully dip into the chocolate, coating completely; lift cookie out. Hold cookie on spatula, allowing excess chocolate to drip off. Place cookie onto wire cooling rack and garnish with colored sprinkles, if desired. Repeat with remaining cookies. Let chocolate set. Place coated cookies in freezer for 1 hour to set before storing or serving. Store cookies in airtight container for up to 1 week, or in freezer for up to 3 weeks.

The Pumpkin Bread Mix, Pumpkin Butter, and Cinna-Cream Sprinkles are available only during the fall and winter holiday season (September – December). You’ll find them under Gifts at my Watkins Online web site. The Pumpkin Butter tastes great on pumpkin bread, muffins, bread, toast, bagels, biscuits, or Watkins Good Tastings Bread. And here’s a recipe for cupcakes that uses Pumpkin Butter as an ingredient.

Pumpkin Butter Cupcakes

2 1/4 cups/560 ml all-purpose flour
1 tbsp/15 ml Watkins Baking Powder
1/2 tsp/2.5 ml baking soda
1/2 tsp/2.5 ml salt
1/2 tsp/2.5 ml Watkins Cinnamon
1/2 tsp/2.5 ml Watkins Ginger
1/2 tsp/2.5 ml Watkins Nutmeg
1/2 cup/125 ml butter, softened
1 1/3 cups/325 ml sugar
2 eggs
1 cup/250 ml Watkins Pumpkin Butter
3/4 cup/180 ml milk
3/4 cup/180 ml chopped walnuts

In medium bowl stir together flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg. In large bowl cream together butter and sugar until light and fluffy; beat in eggs. Blend in pumpkin butter. Stir in dry ingredients and milk, blending until batter is smooth. Stir in chopped walnuts. Spoon batter into paper lined muffin tins. Fill about 2/3 full. Bake at 375 degrees F/190 degrees C for 18 to 22 minutes. Makes 16 cupcakes.

Brown Sugar Frosting

1/4 cup/60 ml butter
6 tbsp/90 ml brown sugar
6 tbsp/90 ml half-and-half
2 cups/500 ml powdered sugar
1 tsp/5 ml Watkins Vanilla

In 2 quart/ 2 liter saucepan melt butter over medium heat. Add brown sugar and half-and-half. Continue cooking, stirring occasionally, until mixture comes to a boil (2 to 3 minutes). Let cool to spreading consistency (5 to 10 minutes). Frost cupcakes.
