Saturday, January 23rd is National Pie Day, so why not bake an awesome pie and take it over to one of your neighbors to either introduce yourself or say thanks for all the little things they do? Or invite one of your neighbors over for a slice of pie and a cup of coffee or a glass of milk.
Neighbors working together help one another through good times and bad; that makes getting to know your neighbors so worthwhile.
Most people lead such active lives that it’s easy to forget how important it is to have good neighbors. They help shape your community, offer support and take in your mail so no one knows when you’re away from home.
Crumb Topped Cherry Pie
4 cups Sour Cherries
1 cup Sugar
1/4 cup Corn Starch
1 tsp. Watkins Cinnamon
1/2 tsp. Watkins Almond Extract
Pie Crust
2 1/2 cups unbleached flour
1 tsp. salt
1 tsp. sugar
1 cup chilled cut up butter
1/4 to 1/2 cup cold water
Crumb Topping
1/4 cup butter
1/4 cup unbleached flour
3/4 cup brown sugar
1-2 tsp. Watkins Cinnamon
Prepare pie crust
Put flour, salt, sugar in bowl. Add butter and use pastry blender to blend mixture until it resembles coarse meal. Add water a little at a time until mixture comes together. Divide dough in half and make into a discs. Wrap in plastic wrap and chill in refrigerator for 1 hour.
Pie Filling
Combine cherries, sugar, corn starch, cinnamon and almond extract in bowl. Set aside.
Crumb Topping
Crumble chilled butter, flour, sugar and cinnamon together. Set aside.
On a slightly floured surface, roll one disk of dough into a 12″ round about 1/8″ thick. Line your pie shell with dough. Pour in Cherry filling. Then add Crumb topping.
Bake pie at 350 F for 20 minutes then turn down oven to 325 F for 25 to 30 minutes. We have a very hot oven, this is why a lower temp. Cool. Serve with whipped cream or vanilla ice cream.
Rhubarb Dream Pie
Crust:
2 cups flour
10 T powdered sugar
1 cup cubed butter
Filling:
4 beaten eggs
1 1/2 cups sugar
1/2 cup flour
1 tsp salt
1 tsp Watkins Vanilla Extract
4 cups cut up rhubarb, fresh or frozen, thawed
For Crust
Combine ingredients and pat into a 9 x 13 pan. Bake at 350 degress F for 15 minutes.
For Filling
Blend ingredients and pour over baked shell. Bake for 40 minutes at 350 degrees F. Serve with whipped cream.
