I’ve been throwing my overripe bananas in the freezer and decided to make banana walnut muffins this past weekend. I usually make banana bread but opted for muffins this time.
3 overripe bananas, mashed
1/2 cup sugar
1 slightly beaten egg
1/2 cup melted butter
1/2 teaspoon Watkins Vanilla
1/2 teaspoon baking soda
1 teaspoon Watkins Baking Powder
1/4 teaspoon salt
1/4 teaspoon Watkins Cinnamon
1 1/2 cups all purpose flour
1/2 cup chopped walnuts ( additional chopped nuts for topping)
1. Mix the mashed banana, sugar, egg, vanilla, and butter together. Set aside.
2. In a separate bowl, mix together baking soda, baking powder, salt, cinnamon, and flour.
3. Mix dry ingredients with banana mixture.
4. Add the walnuts and mix.
5. Pour batter into greased and floured muffin tins, or use paper liners.
6. Sprinkle chopped nuts on top of each muffin.
7. Bake in pre-heated 375 degree oven for 15-20 minutes. Makes 12 muffins.
