Halloween Food Fun: Potato Eyeballs

 

Makes 12

Ingredients:
12 Baby New Potatoes (about 9 oz)
5 tbsp cream cheese, softened
Pimento stuffed olives, halved
1 tbsp extra virgin olive oil
Salt and black pepper

Instructions:
Preheat the oven to about 400degrees Fahrenheit.

Scrub the potatoes and place them into a roasting pan. Toss with the olive oil and season with salt and pepper. Place in the oven and roast until soft inside and crispy on the outside – about 25 minutes. Allow to cool slightly, then scoop a little bit of the potato flesh from the top of each potato with a spoon. Fill it with cream cheese and top with a pimento stuffed olive half.

Great for Halloween Parties!

Halloween Food Fun: Wicked-Good Punch

48oz cranberry juice cocktail, chilled
½ liter ginger ale, chilled
1 liter lemonade, chilled
Lots of ice cubes

Instructions:
Mix all ingredients together in a large punch bowl and add ice-cubes to chill the punch.

A great punch for Halloween. Add a spooky frozen hand (made of ice) and you’ll have the perfect blood-red punch for your kids’ Halloween Party.

Rainy Halloween Treats

When trick-or-treating first became popular in the United States in the 1800s, more children played mischievous pranks than asked for candy. By the 1950s, though, the focus had switched to good old family fun, with sugar-hyped children dressed in costumes.

The candy-collecting tradition spread from the United States to Canada, Australia, and Western Europe, where more and more little goblins now trick-or-treat. In parts of England, children carry lanterns called punkies (which look like jack-o’-lanterns) and parade through the town on the last Thursday of October. In Ireland, rural neighborhoods light bonfires, and children play snap apple, in which they try to take a bite from apples that are hung by strings from a tree or a door frame.

Our weatherman says rain may arrive just in time for Halloween and trick or treating tomorrow! As a matter of fact, it’s raining now! If rain is forecast where you live you may want to keep your little ghosts and goblins inside and surprise them with some homemade Halloween treats.

Caramel Fruit Dip
1 package (8 oz,) softened cream cheese
1/4 cup brown sugar
1 tsp Watkins Vanilla
1/2 tsp. Watkins Caramel Extract

Using an electric mixer, combine softened cream cheese, brown sugar and extracts. Use as a dip for apple or pear slices.

Watkins Crab Spread
1 package (8 oz.) cream cheese
2 tbsp. Watkins Crab Snack and Dip Seasoning
1 tsp. Watkins Minced Green Onion
1 can (6 oz.) crabmeat, drained
Watkins Omelet and Soufflé Seasoning

Beat 1 package (8 oz.) softened cream cheese until light and fluffy. Stir in Crab Snack nnd Dip Seasoning, Green Onion, and crabmeat. Roll into a bell, then coat with Omelet and Soufflé Seasoning. Serve with crackers, cocktail rye bread or celery sticks

Chesapeake Appetizer Spread
1- 8 oz. package Cream Cheese
1/4 cup Sour Cream
3 tbsp. Mayonnaise
1 1/2 tbsp. Watkins Crab Snack and Dip Mix
1 tbsp. Watkins Onion Flakes
1/4 tsp. Watkins Garlic Powder Granules
Dash Watkins Cayenne Pepper
6 oz. Crab Meat – if canned, rinse and drain; if frozen, thaw (or imitation, works very well)
1/2 Cup Shredded Cheddar Cheese
Watkins Paprika

In medium bowl, combine first 7 ingredients; mix well. Add crab meat. Place mixture in shallow serving dish, such as a decorative pie plate, and bake at 350 degrees for 10 minutes. Take out of oven and sprinkle with cheese and Paprika. Return to oven and bake until bubbly (about 15 minutes). Let stand 5 minutes. Serve hot with assorted crackers, bread sticks or toasted baguette slices. Makes 10 servings.

Honey Glazed Snack Mix
4 cups corn cereal squares
1-1/2 cups mini-pretzel twists
1 cup walnut or pecan halves
1/3 cup butter or margarine
1/4 cup honey
1 tsp Watkins Cinnamon
1 tsp. Watkins Butter Extract
1 tsp. Watkins Caramel Extract

Combine cereal, pretzels, and nuts in large bowl. In small saucepan, melt butter over low heat; stir in honey and remaining ingredients. Pour over cereal mixture; toss gently to coat. Spread on 15×10-inch jellyroll pan. Bake at 350 degrees for 12 to 15 minutes, stirring occasionally until glazed. Cool slightly; spread on waxed paper. Cool completely. Store in tightly covered containers.

Halloween Get Together Recipes – Crawly Creatures and Funny Face Seven Layer Dip

These chocolate bundles are one of my favorite no bake cookies. Turn them into creepy bugs for Halloween by adding two m and m’s for eyes!

1 12 oz/340g bag of chocolate chips or butterscotch chips
1 package crispy Chinese noodles
Bag of M and M Candy

Pour chocolate or butterscotch chips in a glass bowl and melt in the microwave for a few seconds. Stir until smooth. Or place bowl of chips over a pan of very warm water (not boiling) for a few seconds. Stir until melted and smooth.

Blend in the crispy Chinese noodles and spoon onto a cookie sheet. Add the m and m candy for eyes and refrigerate until ready to serve.

Are you invited to a Halloween get together and can’t decide what to take? How about a Seven-Layer Dip with a funny or jack-o-lantern face! Sprinkle top of the dip with shredded cheese and use vegetables to form a face. Serve with corn chip scoops or tortilla chips.

Seven Layer Dip

1 9-oz. can bean dip
1/4 c. taco sauce or picante sauce
1 8-oz. carton sour cream
1 6-oz. container guacamole dip
1 c. shredded cheddar cheese or Monterey Jack cheese
1/4 c. sliced green onions
1/2 sliced black olives
2/3 c. chopped, seeded tomatoes, drained
Corn Chips, Tortilla Chips, Crackers

1. Combine bean dip and picante sauce. Spread on a platter in a 1/4-inch thick layer.
2. Layer sour cream and then guacamole dip.
3. Top with cheese, green onions and then olives.
4. Sprinkle with chopped tomato.
5. Sprinkle with another layer of shredded cheddar cheese.
6. Using vegetables such as cauliflower, broccoli, carrot sticks, green onion, tomato, red bell pepper, and green bell pepper make a face on top of the cheese.
7. Cover with plastic wrap and chill.
8. Serve with corn chips, tortilla chips or crackers.

Crawly Creatures

Bread dough or 1 puff pastry sheet (from 17.3-oz. box), thawed if frozen
Flour, for dough
1 package (12 oz.) cocktail beef franks, rinsed and patted dry
French fried potato sticks
Mustard
Ketchup
Honey mustard, for dipping

1. Unfold pastry on a lightly floured surface. Using a floured rolling pin, roll out to 12 by 12-/14 inches. Cut pastry into 3-inch long by 1 1/2-inch wide strips.
2. Preheat oven to 425 degree F.
3. Roll each frank in a pastry strip, pressing edge with fingers to seal while leaving both ends of frank exposed. Place on baking sheet.
3. Bake franks until golden brown, 10 to 12 minutes. Cool slightly.
4. Add french fried potato sticks for legs and antennae.
5. Dot rolls with mustard and ketchup and mustard dots for eyes.
6. Serve warm with honey mustard for dipping.

Family Fun Halloween Recipes – Yummy Mummy, Trick-or-Treat Cake, Spaghetti Worms

Halloween is next Friday, October 31st. Whether you celebrate Halloween with costumes, decorations, parties, and treats or prefer a Harvest Celebration giving thanks for a bountiful year and an abundance of crops and beautiful fall colors, your family and friends will enjoy some special additions to your party menu.

This Yummy Mummy is so much fun to make and eat and will be the hit of your party!

Yummy Mummy Cheese Spread

2 port wine cheese logs or cheese logs of your choice (12 ounces each)
1 package (8 ounces) cream cheese, softened
1 tablespoon milk
2 whole peppercorns
pimiento strips or strips of fresh red bell pepper

Cut cheese logs into pieces for mummy’s head, body, arms and legs; arrange on a serving plate.

In small mixing bowl, beat cream cheese and milk. Cut a small hole in the corner of a pastry or plastic bag; insert basket weave tip #47. Pipe rows across the mummy, creating bandages. Add peppercorns for eyes and pimiento strips or red pepper strips for mouth and cuts.

Chill until serving. Yield: 1 mummy. Serve with crackers, bagel chips, or bagette slices.

Tip
If you can’t find cheese logs, make your favorite cheese ball recipe, shape into a log, and chill; then cut into pieces to form mummy.

Trick-or-Treat Cake
This fun Halloween cake looks like a giant trick-or-treat bag with lots of candy spilling out of it.

1 package (18-1/4 ounces) chocolate cake mix
2 cans (16 ounces each) vanilla frosting or homemade vanilla butter cream frosting
1 tube each black, orange and green decorating gel
Assorted candies

Prepare and bake cake according to package directions, using a greased and floured 13-in. x 9-in. baking pan. Cool for 10 minutes before removing from pan to a wire rack to cool completely.

Transfer the cake to a 20-in. x 17-in. covered board. Create a zigzag pattern on one short end of cake to resemble the top of a treat bag. Spread top and sides of cake with frosting; decorate, as desired, with gels and candies. Yield: 12 servings.

Tip
Line baking pan with parchment paper that extends over edges of pan to help removing baked cake from pan.

Spaghetti Worms for Brains
Most kids like spaghetti so these pasta-filled jack-o-lantern peppers will be a “brainy” treat.

8 to 10 medium sweet orange bell peppers
1 package (16 ounces) spaghetti
1 pound ground beef
1 jar (26 ounces) spaghetti sauce

Cut tops off peppers and set aside; remove seeds and membranes. Cut a jack-o’-lantern face on one side of each pepper; set aside.

Cook spaghetti according to package directions. Meanwhile, in a Dutch oven, cook beef over medium heat until no longer pink; drain.

Drain spaghetti and add to beef. Stir in spaghetti sauce; heat through. Spoon into peppers; replace tops. Yield: 8-10 servings
