I got this recipe from a church friend and it was the first time my then 3 year old son actually ate a full meal! My kids just can’t get enough! I usually use pre-made meatballs, but I have included the meatball part as well, since it came iwth the recipe.
Meatballs:
1 1/2 LBS ground beef, 1 egg, 1 chopped onion, 1 slice of bread, and 1 raw potato(optional but makes them much more filling so I suggest it:)), salt, pepper
Knead together ground beef, egg, chopped onion, cubed bread, shredded potato, salt and peper. Form into small balls, roll in your hand until well formed. Brown in a roaster for 1/2 an hour at 400*
Sauce:
1/2 cup ketchup, 1 cup water, 2 tbsp brown suger, 2 tbsp vinegar, 1 tbsp cornstarch
Mix all ingredients for sauce and bring to a boil inthe microwave. Pour over meatballs that have been browned and bake at 325* to 350* for 1 hour more.
We generally have this over rice but it is great on mashed potatoes as well. I always make double the sauce because we like to have lots of sauce on ours:)�
