Sugar Free Banana Bread Pudding

I took part in a Recipe Exchange recently and thought I would share the recipes with you all as they start coming in! Here is the first one, sent from Primitive Fixins.

1 Small package of Sugar free Cook and Serve Vanilla Pudding
2 ½ cups of FF Milk
2 bananas mashed
2 tsp vanilla extract
¼ cup Splenda
½ cup egg beaters
4 pieces of Double fiber bread(or any low cal whole wheat bread)

Preheat oven to 375 degrees. In a medium sized pot add the mashed banana, and the milk. Whisk in the pudding mix and heat over medium heat stirring constantly until it begins to thicken. Turn off heat. Add vanilla and slowly add in egg beaters, stirring contantly until blended. Tear into medium sized pieces, the 4 slices of bread and put them into a casserole dish. Pour the pudding mixture on top of the bread slowly making sure all bread is covered. Bake in a water bath for 25-30 minutes.

4 servings= 181 calories and 11.5g protein
6 servings= 120 calories and 7.6g protein
