It’s Not Thanksgiving any more–What’s with the Pumpkin??

It is the New Year, past the holiday season. Guess What?? I am still making things with pumpkin. Why you ask? Well, mainly, it is because it is in my cupboard. :-) I didn’t use it all up during the Holiday Season when most people eat pumpkin products. So, I am eating them now. :-)

Tonight Will and I made Patty’s Pumpkin Pudding from the Nestle website, VeryBestBaking.com.

Ingredients:

  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon gound ginger (optional)
  • 1/4 teaspoon ground cloves (optional)
  • 2 large eggs
  • 1 can (15 oz.) Libby’s 100% Pure Pumpkin
  • 1 can (12 oz) Nestle Carnation Evaporated Milk

Directions:

Preheat over to 350 degrees. Lightly grease 11 x 7 inch baking dish.

Combine sugar, cinnamon, salt, ginger and cloves in small bowl. Beat eggs in large bowl. Stir in pumpkin and sugar mixture. Gradually stir in evaporated milk. Pour into prepared baking dish.

Bake for 40 minutes or until center is slightly wiggly. Do not overbake. Let cool on wire rack. Serve immediately or refrigerate. www.VeryBestBaking.com Nestles Recipe

Will did most of the work in making the pudding. Will is four years old soon to be five. He loves to help Mommy in the kitchen. I cracked the eggs, and Will “beat” the eggs as well as a four year old can. :-) I opened the pumpkin and scooped that into the bowl. Will stirred the pumpkin and eggs together. I poured the sugar mixture into the eggs and pumpkin mixture, and Will stirred. :-) He helped me so much by stirring everything. I poured the evaporated milk in the mixture, and Will stirred. This is a great recipe for having a child help. If you child can stir, this is a recipe for you and your child. :-) I poured it in the baking dish and placed it into the over. We waited as patiently as hungry little children do. :-)

We have made this recipe a few times. When you make this, keep in mind that eating it hot and eating it cold are two different experiences. I like it cold much better than hot. My children on the other hand are happy to eat it either way.
