I made this Ham and Cheese Loaf today for lunch. Refrigerated dough stuffed with ham and cheese makes a delicious hot sandwich. There were three of us for lunch and we ate the whole loaf! The recipe says it servers 4 to 6 people.
Ham and Cheese Loaf
1 tube (13.8 ounces) refrigerated pizza crust
10 slices deli ham
1/4 cup sliced green onions
1 cup (4 ounces) shredded part-skim mozzarella cheese
1 cup (4 ounces) shredded cheddar cheese
1/2 cup shredded Monterrey jack cheese
1 tablespoon butter, melted
Preheat oven to 350 degrees F.

Unroll dough onto a greased baking sheet; top with the ham, onions and cheeses.

Roll up tightly jelly-roll style, starting with a long side; pinch seam to seal and tuck ends under to seal so cheese doesn’t run out. Brush with butter.

Bake at 350 degrees F for 30-35 minutes or until golden brown. Let stand for 5 minutes; cut into slices. Yield: 4 – 6 servings.

Veggie Tuna Burgers
When I was growing up we used to make tuna burgers for lunch or supper. My Mom just mixed an egg and cracker crumbs with tuna. Then shaped into patties and fried in a little oil or butter in a skillet. We ate the tuna patties with or without rolls.
These Veggie Tuna Burgers have a few more ingredients and are flavorful, moist, and nutritious. They’re an easy way to get your children to eat their vegetables. Experiment with the amount and kind of your favorite vegetables in this recipe.
1/4 cup finely chopped onion
1 garlic clove, minced or 1/2 teaspoon Watkins Garlic Powder
1 cup each shredded zucchini, yellow summer squash and carrots
1 egg, lightly beaten
2 cups soft whole wheat bread crumbs
1 can (6 ounces) light water-packed tuna, drained and flaked
1/4 teaspoon salt
1/4 teaspoon Watkins Black Pepper
1 teaspoon butter
6 hamburger buns, split
6 slices reduced-fat cheddar cheese
6 lettuce leaves
6 slices tomato
In a large nonstick skillet coated with cooking spray, saute onion and garlic for 1 minute. Add the zucchini, yellow squash and carrots; saute until tender. Drain and cool to room temperature.
In a large bowl, combine the egg, bread crumbs, tuna, salt and pepper. Add vegetable mixture. Shape into six 3-1/2-in. patties.
Cook patties in buttered skillet for 3-5 minutes on each side or until lightly browned. Serve on buns with cheese, lettuce and tomato. Yield: 6 servings.
