
Create you own fancy ice cream sandwiches by using sugar cookies, ginger snaps, shortbread cookies, and waffle cone cookies. Use cookie cutters to cut a variety of shapes from cookie dough. If you are in a hurry use small crisp store bought cookies.
Ice cream or frozen yogurt, your favorite flavor or a variety of flavors, slightly softened
Small crisp cookies
Sandwich the ice cream between the cookies. Serve immediately or wrap each ice cream sandwich in plastic wrap, aluminum foil, or a zip loc bag and freeze for up to 2 – 3 days.
Waffle Cone Cookies
1 cup heavy cream
1 1/2 teaspoons Watkins Vanilla Extract
1 1/2 cups powdered sugar
1 1/2 cups all-purpose flour
1/4 teaspoon Watkins Ground Cinnamon
Pinch Watkins Ground Nutmeg
1 tablespoon cornstarch
Oil, for waffle iron
In a bowl with a whisk, whip the cream with the vanilla until mousse-like (it won’t form peaks.) Sift the remaining ingredients together and stir them into the cream to make a batter. Let the batter sit for approximately 30 minutes.
Heat up waffle iron or waffle cone iron and brush with a little oil. Place teaspoonfulls of batter on waffle iron and close the lid to bake and brown. Open the iron and remove the browned cookie. Cool, then make sandwich with a scoop of ice cream.
