Apple Cinnamon Bread

While this Apple Cinnamon Bread is not low in fat, the fresh apples make it moist and delicious. The crumb topping adds a pleasing crunch. 

Recent studies have shown that just 1/4 tsp of cinnamon every day may help to lower blood sugar, fats and cholesterol. Researchers suggest it may also stop the onset of type 2 diabetes in those at risk.

Type 2 diabetes arises when the body loses sensitivity to insulin, a hormone that shuttles the sugars from food into body cells to be used for energy. As a result, the amount of sugar, or glucose, in the blood remains high, leading to fatigue and blurred vision. Over the long term, excess blood glucose can increase the risk of heart disease, kidney failure and blindness. Cinnamon contains compounds that help make insulin more efficient, improving the hormone’s ability to bring glucose to the cells that need it.

Add a dash of cinnamon to coffee, hot chocolate, orange juice, oatmeal, or other cereal. An added benefit, it contains no calories!

Apple Cinnamon Bread
1 cup Butter or Margarine, softened
1 cup Sugar
1 teaspoon Baking Soda
1 tablespoon Lemon Juice
2 Eggs
2 teaspoons Watkins Vanilla
2 cups Flour
1 teaspoon Watkins Cinnamon
1/4 teaspoon Salt
1 1/2 cups Tart Apples, peeled and chopped

Crumb Ingredients
1 teaspoon Watkins Cinnamon
2 tablespoons Sugar
2 tablespoons Flour
2 tablespoons Butter or Margarine, chilled

In a medium bowl, cream butter and sugar together. In another bowl, dissolve soda in lemon juice. Mix in eggs and vanilla. Beat butter mixture and egg mixture together. Add flour, cinnamon, and salt. Fold in apples. Set aside.

Mix crumb ingredients, cutting in butter with a pasty blender until mixture resembles coarse crumbs. Spoon 1/2 of batter into greased loaf pan. Sprinkle with 1/2 crumb mixture. Spoon in remaining batter and sprinkle with remaining crumb mixture. Press crumbs gently into surface of batter. Bake at 375 degrees F for 1 hour or until a knife inserted in center comes out clean. Cool 5 minutes in pan. Remove bread from pan and cool completely on cooling rack. Serve warm or at room temperature.

If you like nuts, add 1/2 cup of chopped walnuts or pecans to the bread batter or to the crumb ingredients.
