Chocolate: “Can’t Mess it Up” Chocolate Fudge*

“Can’t Mess it Up” Chocolate Fudge
Ingredients
1-12oz bag milk chocolate chips 1/4 c. butter or margarine (1 stick)4 c. powdered sugar
1 t. vanilla
1 egg, beaten
Directions
/Note: The wisk attachment on a KitchenAid works wonders on the first step/
First, beat the vanilla, egg and powdered sugar together in a large bowl until its crumbly.
Next, in a saucepan, melt the chips & butter, stirring constantly so they don’t burn. When they’re completely melted & smooth, pour the chocolate mixture into the powdered sugar mixture and stir until blended. Transfer it back to the saucepan on a medium-low heat, and keep stirring (your arm should hurt!). Stir it until its silky smooth. This will ensure that the egg is fully cooked.
/Note: If you’re using a KitchenAid, switch to the beater attachment for this step./
I line casserole dishes with plastic wrap or wax paper, then pour the mixture in. Let it cool, then cut it into small pieces.
Hints:
* Remove the little white glob from the egg or you’ll find it in a piece of fudge. Eww! * I prefer margarine (I Can’t Believe It’s Not Butter), butter works but tends to make it softer.* You can use any type of chip on this, but if you use Reeses PB chips (10 oz. bag) you’ll need 1 c. more powdered sugar, 1/4 c. ore margarine and 1 t. more vanilla–give or take
