Butter Crunch Chocolate Pie
1/2 cup (1 stick) butter, softened
1/4 cup packed brown sugar
1 cup sifted all-purpose flour
1/2 cup chopped pecans or walnuts, or 1/2 cp shredded coconut
1 (4-ounce) package chocolate pudding and pie filling mix
3 egg whites, at room temperature
1/4 teaspoon cream of tarter
6 tablespoons granulated sugar
Mix the butter, brown sugar, flour and pecans in a bowl with your hands.� Spread in a 9 x 13-inch baking dish.� Bake at 400 degrees for 15 minutes.� Remove from the oven and stir to mix.� Press 2 cups of the mixture over the bottom and up the sides of a 9-inch pie plate.
Prepare the chocolate pudding and pie filling mix using the package directions.� Pour into the prepared pie plate.� Beat the egg whites with the cream of tarter in a mixing bowl until foamy.� Beat in the granulated sugar 1 tablespoon at a time until the sugar is dissolved and glossy stiff peaks form.� Spread over the pie, sealing to the edge.� Bake at 400 degrees for 8 to 10 minutes or until the meringue is light brown,.� Let stand until cool.� Sprinkle the remaining brown sugar mixture over the top.
