Groundhog Day 2010: Punxsutawney Phil Predicts Six More Weeks of Winter

Punxsutawney Phil declared six more weeks of winter this morning when he saw his shadow on Gobbler’s Knob in Punxsutawney, Pennsylvania  just after sunrise, at about 7:22 a.m. 

A groundhog would not see his shadow on this overcast rainy day in northern California. Although it’s fun to read about the Groundhog Day festivities, we don’t really know when spring breezes will arrive where each of us live. According to the calender Spring arrives Saturday, March 20.

Make Sausage and Pepper Stew  to warm your insides on a cold rainy day. This spicy stew tastes great with crusty French bread. If hot sausage is too spicy for your family use medium or mild Italian sausage.

Sausage and Pepper Stew
3/4 pound hot Italian sausage
1 medium yellow onion, cut into 1/4-inch-thick half moons
1 medium green bell pepper, cored, seeded, and cut into 1/2-inch-thick strips
1 medium red bell pepper, cored, seeded, and cut into 1/2-inch-thick strips
1  teaspoons salt
1/4 teaspoon Watkins Granulated Black Pepper
One 28-ounce can whole tomatoes, seeded and chopped

Remove casings from sausage; crumble into 1-inch pieces. Heat a large saute pan over medium heat. Add sausage; cook, stirring often, until browned and cooked through, about 8 minutes. Do not over cook. Remove sausage from saute pan with a slotted spoon; set aside.

Pour off all but 1 tablespoon of fat from the pan. Return to medium heat, and add onion. Saute onion until it is just beginning to brown and soften, about 5 minutes. Add peppers, and continue to cook for 10 minutes more.

Season with salt and pepper. Add tomatoes; bring to a boil, and then lower heat and simmer until vegetables are tender and sauce has reduced and thickened slightly, about 12 minutes more.

Return sausage to pan, and cook just enough to heat through. Adjust seasoning with salt and pepper. Serves 4.
