Thanksgiving dinner isn’t the same without potatoes. Our family usually has two kinds of potatoes – mashed potatoes and candied sweet potatoes.
If you are looking for a change of pace try Mashed Maple Sweet Potatoes or Make Ahead Mashed Potatoes. Both recipes can be prepared a day ahead and reheated in the oven on Thanksgiving Day.
Mashed Maple Sweet Potatoes
This is a convienent and simply sweet, kid-friendly recipe. A splash of cream and maple syrup add sweet richness, while black pepper adds kick.
3 pounds sweet potatoes
1/2 stick (1/4 cup) unsalted butter, melted
1/4 cup heavy cream, warmed
1/4 cup pure maple syrup, warmed
Pinch of Watkins Ground Cloves
Salt and Watkins Black Pepper, to taste
Additional black pepper and maple syrup (optional, for garnish)
- Preheat oven to 400° F. Pierce each potato with a fork, and bake until very tender, about 1 hour.
- Remove and cool slightly. Halve potatoes lengthwise, and scoop out flesh into a large bowl. Mash with a potato masher or, for a smoother purée, force through a potato ricer. Stir in melted butter, warmed cream and syrup. Taste, and season with salt and pepper.
- Transfer to a serving dish. Sprinkle a few grinds of black pepper and a generous drizzle of pure maple syrup. Serves 4 to 6.
Tip: This recipe can be prepared two days ahead. Cover and refrigerate until ready to use. Reheat in a 350°F oven or in the microwave.
Make Ahead Mashed Potatoes
We love this dish because it’s full of flavor, and it can be prepared ahead of time.
4 pounds potatoes
8 ounces cream cheese
1/2 cup sour cream
1/4 cup melted butter
Salt and pepper to taste
Cook potatoes in just enough water to cover. Boil until tender, drain, and mash. Add all other ingredients except butter. Place in a greased or sprayed 2-quart casserole dish, pour butter over, cover, and refrigerate. Bake in a preheated 350º F oven, covered lightly, for 35-45 minutes. Stir during baking to ensure the middle gets warmed.
Happy Thanksgiving!
