Leftover Turkey Recipes

We always roast a turkey large enough so that we have leftover turkey for sandwiches. Use the leftover turkey in one of these recipes.
Holiday Turkey Casserole with Croutons
Wondering what to do with your leftover turkey? Here’s an easy layered dish that uses canned soup and croutons.
3/4 cup melted butter
1/2 cup chopped onion
1/2 cup chopped celery
4 cups seasoned croutons
4 cups cubed leftover cooked turkey or chicken
Watkins Black Pepper
1 can [10 3/4 oz.] condensed cream of celery soup
1 can [10 3/4 oz.] condensed cream of chicken soup
1 cup milk
Melt butter in a large skillet. Cook and stir celery and onion in butter until tender. Add croutons and toss to coat. Put half of the crouton mixture in an 11×7-inch baking pan. Add turkey, then remaining croutons. Heat the soups and milk together in a saucepan. Add pepper to taste. Pour this mixture over the layers. Bake in 325 degree F oven for 45 minutes or until heated through.
Number of Servings: 4 to 6
Turkey Salad Sandwiches
1 cup cooked turkey, cubed
3 tablespoons mayonnaise
1 tablespoon finely chopped onion or 1/4 teaspoon Watkins Onion Powder
1/2 cup celery, chopped
1/2 cup dried cranberries
1/4 teaspoon Watkins Black Pepper
Mix all the ingredients together. Use this as a filling for multi-grain bread, croissants, or pita sandwiches.
Cranberry Turkey Croissants
These croissants are filled with cranberries, turkey and cheddar cheese. Spread the rolls with mustard, Miracle Whip Salad Dressing, or mayonnaise before filling.
1/4 cup orange juice
1/4 cup dried cranberries
4 croissants, split
1/4 cup Dijon-style mustard, Miracle Whip Salad Dressing, or mayonnaise
4 slices cooked turkey
4 slices cheddar cheese
In a microwave-safe bowl, combine orange juice and Miracle Whip Salad Dressing, or mayonnaise. Drain cranberries if any liquid remains. Sprinkle over spread. Top with turkey and cheese. Replace tops. Serve.
Turkey Stuffin Muffins
Use holiday leftovers to top English muffins and create an easy meal.
4 English muffins, split and toasted
1/4 cup Dijon-mustard
1 cup whole berry cranberry sauce
2 cups leftover stuffing
2 cups cooked diced turkey
2 cups turkey gravy
1 cup grated Parmesan cheese
Preheat oven to 375 degree F. Arrange split and toasted English muffin halves on baking sheet. Top with ingredients in order given, reserving Parmesan. Bake 15 to 17 minutes to warm ingredients through. Sprinkle with cheese. Return to oven for an additional 5 to 7 minutes until cheese is golden. Number of Servings: 4
