Favorite Ingredients Friday – Chapati Bread

Chapati is a simple but delicious Indian flatbread. Chapatis are usually eaten with cooked soups or vegetable curries. Pieces of the chapati are used to scoop up or wrap around and pick up each bite of the cooked dish. They are also eaten with meat dishes like chicken and lamb curry. They can even be used to make sandwich wraps. They taste best served warm from the oven.

Chapati Bread (Indian Flatbread)

2 cups unbleached bread flour
1/2 tsp salt
3/4 cup lukewarm water
2  1/4 tsp yeast (1 pkg dry yeast)
5 tablespoons clarified butter (melted butter with solids removed)
1 egg
Sesame seeds, garlic powder, other spices

Mix yeast and lukewarm water in a large bowl. Add salt and flour and mix. Then add 3 tablespoons of the butter and the egg. Break egg into a small bowl first to check for impurities. Then stir into flour mixture.

Flour work surface and place dough on flour. Dough is a wet dough. Sprinkle flour on top of dough. Flour hands and knead dough for 10 minutes, adding more flour if necessary. Knead until smooth and elastic.

Lightly butter inside of bowl and place dough in bowl, then turn dough over so that both sides are lightly coated with butter. Cover bowl with plastic wrap and let dough rise in a warm place for 1 1/2 to 2 hours. Punch down dough and divide into fourths. Roll each section into a round or an oval about 6 to 8 inches in diameter.

Turn oven to broil with top rack 6 to 7 inches from heat. Place dough on parchment paper on baking sheet, one or two to a pan depending on size of pan. Brush melted butter on top side. Sprinkle with sesame seeds, garlic powder, or other spices of your choice or leave plain. Broil for two minutes or until golden brown. Remove pan from oven and turn bread, brush with melted butter and sprinkle with seeds or spices if desired. Broil second side for two minutes until golden brown.

Bread may puff slightly. Keep warm while cooking other pieces of dough.
