Chocolate: White Chocolate Devil’s Food Pie

WHite Chocolate Devil’s Food Pie
Ingredients:
2 cups, cold skim milk, divided
1 package Jello devil’s food-flavor fat-free instant pudding & pie filling, (4-serv size)
1 container Cool Whip Lite whipped topping - (8 oz), thawed, divided
1 prepared reduced-fat graham cracker crumb crust - (6 oz)
1 package Jello white chocolate-flavor fat-free instant pudding & pie filling, (4-serv size)

Instructions:
1. Pour 1 cup of the cold milk into medium bowl. Add devil’s food flavor pudding mix. Beat with wire whisk 1 minute. (Mixture will be thick.) Gently stir in 1/2 of the whipped topping. Spoon evenly into crust.

2. Pour remaining 1 cup cold milk into another medium bowl. Add white chocolate flavor pudding mix. Beat with wire whisk 1 minute. (Mixture will be thick.) Gently stir in remaining whipped topping. Spread over pudding layer in crust

3. Refrigerate 4 hours or until set. Garnish with additional whipped topping, if desired. Store leftover pie in refrigerator.

Quick & Easy Meals and Recipes

I was searching on one of my favorite sites for new recipes,� www.allrecipes.com and found some neat meal ideas with there Instant Meals Feature.� I wanted to share the one that I found to be the most interesting yet easy… well I put this meal together myself after collecting some easy recipes.� I like to try and recreate things I eat out at my favorite restaurants.� One of our favorites is mexican and my favorite is Quesadillas.� Enjoy these recipes or this “INSTANT MEAL”� !�

Main Dish :� Chicken Quesadillas
1 pound skinless, boneless chicken breast halves
1 (1.27 ounce) packet fajita seasoning
1 tablespoon vegetable oil
2 green bell peppers, chopped
2 red bell peppers, chopped
1 onion, chopped
10 (10 inch) flour tortillas
1 (8 ounce) package shredded Cheddar cheese
1 tablespoon bacon bits
1 (8 ounce) package shredded Monterey Jack cheese
DIRECTIONS:
- Preheat the broiler.
- Cut the chicken into small cubes and prepare with the fajita seasoning mix. Broil 5 minutes, or until the chicken is no longer pink on the inside
- Preheat oven to 350 degrees F (175 degrees C).
- Heat the oil in a large saucepan over medium heat. Mix in the seasoned chicken, green bell peppers, red bell peppers and onion. Slowly cook and stir 10 minutes, or until the vegetables are tender.
- Layer 1/2 of each tortilla with Cheddar cheese, chicken mixture and desired amount of bacon bits. Top with Monterey Jack. Fold the tortillas.
- Bake in the preheated oven 10 minutes, or until the cheese has melted.
SIDE DISHES:�
RICH MEXICAN CORN
1 (8 ounce) package cream cheese
1/2 cup butter
1/2 cup milk
1 (16 ounce) package frozen corn
1 red bell pepper, diced
8 fresh jalapeno peppers, diced
DIRECTIONS:
- Preheat oven to 350 degrees F (175 degrees C).
- In a saucepan over medium-low heat, melt the cream cheese and butter, and mix with the milk until smooth and bubbly.
- In a medium casserole dish, mix the frozen corn, red bell pepper, and jalapeno peppers. Pour in the cream cheese mixture, and toss to coat.
- Bake 35 to 45 minutes in the preheated oven, until bubbly and lightly brown.
Baked Cinnamon Apples
I use canned apples and sprinkle with cinnamon & sugar and bake.� YUM-O

Quick and Easy Tiramisu
Ingredients:
1 package of soft� lady fingers (Milano Giant Lady Fingers Biscuits� work best)� OR� chunks of white cake
475g� tub of ricotta cheese
250ml of real whipping cream
1 cup of very strong coffee� OR espresso
white sugar
cocoa powder
chocolate shavings (optional)
Note: These ingredients are enough to make 6� individual servings in large� martini glasses. To make a� bowl full� you will need to double the ingredients.
Instructions:
Step #1:� Divide the ricotta cheese into two bowls. To one add� white sugar until you reach the desired sweetness. To the other add both white sugar and cocoa powder. If you like� sweet desserts you’ll want to be generous with the sugar because this is where all the sweetness for� this dessert� comes from.� �
Step #2:� Make the fresh whipped cream. Adding several teaspoons of white� sugar to reach the desired sweetness.
Step #3:� Brew the coffee or espresso. Using instant coffee is fine if that’s all you have, just be sure to make it strong. Add a tablespoon of sugar.�
Step #4: Assemble the tiramisu by� starting with a� layer of lady fingers on the bottom. If you’re using martini glasses� half of one will be plenty on the bottom.� On top of� this� spoon coffee until the lady finger is dampened but the coffee is not pooling.� Add several large tablespoonfuls� of the white ricotta cheese. Follow this with another layer of lady fingers and spoon on more coffee. Add a layer of the chocolate ricotta cheese next. If you still have room in your glass feel free to add more layers.�
Finish with a layer of lady fingers - without any coffee -� and� top with whipped cream. Sprinkle� with chocolate shavings or a little cocoa powder.
