Cream Cheese Chocolate Chip Coffee CakeThis is perfect for an afternoon coffee, or as a gift for a good friend who needs a sweet moment.Ingredients:
1/4 lb butter (1 cube)
8 oz. cream cheese
2 eggs
1 1/4 cup sugar
2 cups flour
1 tsp vanilla
1 tsp baking powder
1/4 tsp salt
1/4 cup milk
6 oz chocolate chips - Use ONLY semisweet ones, the others are TOOO sweet!
Topping:
1/4 cup sugar
1 tsp cinnamon
1/4 cup chopped pecans - optional
Mix together first 4 ingredients in a large bowl till creamy. Add the rest ingredients, continually mixing. Add in the flour slowly and in small increments to aid in smooth mixing, then for best results add milk last. The mix should be creamy but not drippy. Stir in chocolate chips using a large spoon.
Spoon mixture into pan(s). If using a bundt pan, fill half full. You will need to slice off the excess to serve, so don’t bother filling it overfull. If using bread pans, fill about half to 3/4 full. Sprinkle topping over all. Bake at 350° (F) for 50-55 minutes. Cakes will rise and become golden brown. Test by inserting a knife or toothpick. When done, the knife will come out almost dry. Makes one large bundt cake, or two medium bread-size loafs

Chocolate: “Can’t Mess it Up” Chocolate Fudge*

“Can’t Mess it Up” Chocolate Fudge
Ingredients
1-12oz bag milk chocolate chips 1/4 c. butter or margarine (1 stick)4 c. powdered sugar
1 t. vanilla
1 egg, beaten
Directions
/Note: The wisk attachment on a KitchenAid works wonders on the first step/
First, beat the vanilla, egg and powdered sugar together in a large bowl until its crumbly.
Next, in a saucepan, melt the chips & butter, stirring constantly so they don’t burn. When they’re completely melted & smooth, pour the chocolate mixture into the powdered sugar mixture and stir until blended. Transfer it back to the saucepan on a medium-low heat, and keep stirring (your arm should hurt!). Stir it until its silky smooth. This will ensure that the egg is fully cooked.
/Note: If you’re using a KitchenAid, switch to the beater attachment for this step./
I line casserole dishes with plastic wrap or wax paper, then pour the mixture in. Let it cool, then cut it into small pieces.
Hints:
* Remove the little white glob from the egg or you’ll find it in a piece of fudge. Eww! * I prefer margarine (I Can’t Believe It’s Not Butter), butter works but tends to make it softer.* You can use any type of chip on this, but if you use Reeses PB chips (10 oz. bag) you’ll need 1 c. more powdered sugar, 1/4 c. ore margarine and 1 t. more vanilla–give or take

Valentine’s Chocolate’s Kids Can Make

When I was younger, this was a family holiday tradition. It started as a Christmas tradition but quickly took over most holidays. Any child who can hold a tooth pick and� can understand basic instructions can help with this. Even my 2� year old sister loved this one.
You need: colored chocolate melts, valentine’s chocolate molds, and toothpicks.
You will need to melt the chocolate in small portions in the microwave. Start with the accent color - red is perfect for valentines.
Let your child use a tooth pick to “decorate” by filling in the details of the chocolate mold. It doesn’t matter if they don’t get it perfect. Thats the nice thing about a single ingredient recipe - it’s hard to mess up the taste. Let sit for a few minutes to harden slightly
Depending on the age of the child, you may want to fill in the remaining mold yourself. Older children can use a small spoon to fill in the remaining area with another� white or milk chocolate.
Let the molds sit in the fridge until completely hard. You children can then help pop them out and place them in a storage tin(at least the ones they don’t eat:))

Chocolate: Butter Crunch Chocolate Pie

Butter Crunch Chocolate Pie
1/2 cup (1 stick) butter, softened
1/4 cup packed brown sugar
1 cup sifted all-purpose flour
1/2 cup chopped pecans or walnuts, or 1/2 cp shredded coconut
1 (4-ounce) package chocolate pudding and pie filling mix
3 egg whites, at room temperature
1/4 teaspoon cream of tarter
6 tablespoons granulated sugar
Mix the butter, brown sugar, flour and pecans in a bowl with your hands.� Spread in a 9 x 13-inch baking dish.� Bake at 400 degrees for 15 minutes.� Remove from the oven and stir to mix.� Press 2 cups of the mixture over the bottom and up the sides of a 9-inch pie plate.
Prepare the chocolate pudding and pie filling mix using the package directions.� Pour into the prepared pie plate.� Beat the egg whites with the cream of tarter in a mixing bowl until foamy.� Beat in the granulated sugar 1 tablespoon at a time until the sugar is dissolved and glossy stiff peaks form.� Spread over the pie, sealing to the edge.� Bake at 400 degrees for 8 to 10 minutes or until the meringue is light brown,.� Let stand until cool.� Sprinkle the remaining brown sugar mixture over the top.
Serves 6 to 8

My family’s Favorite Meatball Sauce

I got this recipe from a church friend and it was the first time my then 3 year old son actually ate a full meal! My kids just can’t get enough! I usually use pre-made meatballs, but I have included the meatball part as well, since it came iwth the recipe.
Meatballs:
1 1/2 LBS ground beef, 1 egg, 1 chopped onion, 1 slice of bread, and 1 raw potato(optional but makes them much more filling so I suggest it:)), salt, pepper
Knead together ground beef, egg, chopped onion, cubed bread, shredded potato, salt and peper. Form into small balls, roll in your hand until well formed. Brown in a roaster for 1/2 an hour at 400*
Sauce:
1/2 cup ketchup, 1 cup water, 2 tbsp brown suger, 2 tbsp vinegar, 1 tbsp cornstarch
Mix all ingredients for sauce and bring to a boil inthe microwave. Pour over meatballs that have been browned and bake at 325* to 350* for 1 hour more.
We generally have this over rice but it is great on mashed potatoes as well. I always make double the sauce because we like to have lots of sauce on ours:)�

Dave’s Australian Smoked Chicken Breasts

First of all, these are not nearly as complicated as the name sounds, lol. My husband has a nack for throwing things together and making them turn out great. This is one of my favorites.
Ingredients:
1 skinless, boneless chicken breats per person
1 slice Australian smoked roll cheese per person
3 tbsp lemon juice
2 tbsp each garlic powder, onion pawder, basil and oregono
Directions:
Place chicken in a large frying pan. Add water until 3/4 chicken is covered. Add lemon juice and seasonings to the water and bring to a boil. Continue to boil until chicken is cooked through. Remove chicken pieces from water and place a slice of cheese on each. Allow cheese to melt before serving. This also tastes amazing with Gouda or Monterey Jack with Jalapenos

Alyssa’s Mushroom/Bacon/Chicken Crockpot Meal

Hey ALL!
I just love to cook and I love to experiment. This was the result of my experiment yesterday.�
Ingredients
1 lb. fresh mushrooms
3 boneless skinless chicken breast
6 slices of bacon
1 can cream of mushroom soup
1 can whole milk
�
Wrap chicken breasts in 2 slices of bacon each and place in crockpot.� Cream together cream of mushroom soup and whole milk.� Pour over chicken breasts.� Pour in fresh mushrooms, add salt and pepper to taste.� Cook on high for 4 hours or low for 8 hours.�
YUM - 0� !�
Serves 3.�

Crystal’s 1 Pot Hamburger Rice Casserole

Must Have Ingredients:
1 lb ground beef
1 jar of pasta sauce
2 cups of instant rice
Optional Ingredients
1 chopped onion
seasonings (I use seasoning salt, garlic powder and onion powder)
Frozen veggies (I like it with corn but any veggie works)
grated cheese
Directions
In a large pot, fry up the chopped onions and groun, sprinkle seasonings on the meat.
Add 2 cups of water,� the pasta sauce and the frozen veggies. Bring to a boil, stirring as needed.
Add 2 cups of instant rice, cover, remove from heat and let sit for 5 minutes.
Fluff with a fork and then top with the grated cheese - serve.
Notes
I usually serve this with buns or garlic bread - and/or a tossed salad. My hubby does not usually like rice but loves this dish. And it’s so cheap and easy!
